Cinnamon is one of the oldest spices known to man. Sri Lanka produces 90% of the world`s cinnamon. The botanical name for the spice—Cinnamomum Zeylanicum—is derived from the original British name of our beautiful island and Ceylon cinnamon really is "True Cinnamon".

Ceylon (Sri Lanka) cinnamon has a very thin, smooth bark with a light-yellowish brown colour and a highly fragrant aroma. Ceylon cinnamon, using only the thin inner bark, has a finer, less dense, and more crumbly texture, and is considered to be less strong than cassia.

Cinnamon bark is widely used as a spice. It is principally employed in cookery as a condiment and flavouring material and is also used in the preparation of chocolate, desserts and cinnamon buns as well as spicy candies, tea, hot cocoa, and liqueurs. In the Middle East, it is often used in savoury dishes of chicken and lamb.

Ceylona cinnamon is "true cinnamon" which genuinely comes from Ceylon (Sri Lanka). This is mix of Grade C, M and H mix grind ground Cinnamon.
